INGREDIENTS (serves 4)

  • 360 ml rice
  • 430 ml dashi
  • a [2/3 tablespoon sake, 1/3 teaspoon salt]
  • 1 1/2 sheets dried yuba (beancurd sheets)
  • sansho (Japanese pepper)
  1. Wash the rice and drain excess water; put in gas rice cooker, using less water than usual, and let sit for about 30 minutes
  2. Add (a) and fill to appropriate level. Tear yuba into rough pieces, add and cook.
  3. When done, mix lightly and arrange on plate. Garnish with sansho.
