WHOLE BROILED SQUID

(Japanese)



INGREDIENTS (4 servings):

4 squid, salad oil
(A): 100 ml soy sauce ("shoyu"), 100 ml sweetened cooking "sake" ("mirin")
HOW TO COOK:
  1. Clean squid; marinate tentacles and trunk in (A) for one hour.
  2. Stuff trunk with tentacles and pin closed with toothpick. Make slits crosswise on one side.
  3. Preheat high-speed gas oven to about 460F (230C). Place lightly greased net on oven plate. Place (2) slit side up on net and broil about 13 minutes, basting occasionally (when fin begins to burn, cover with foil).
  4. When done, cut into several rounds.
