SIMMERED FLOUNDER

(Japanese)



INGREDIENTS (4 servings):

4 flounder ("meita-karei"), about 15 cm long each Simmering sauce: 200 ml water, 1 tablespoon sugar, 4 tablespoons sweetened cooking "sake" ("mirin"), 50 ml "sake" (Japanese rice wine), 4 tablespoons soy sauce ("shoyu")
HOW TO COOK:
  1. Remove scales, and clean fish. Make shallow cuts on both sides so that fish absorbs sauce well.
  2. Put all ingredients for simmering sauce in pan and bring to boil. Arrange (1) in pan, place paper drop lid with hole in center directly on ingredients for even seasoning and cover with another tight-fitting lid. Preheat high-speed gas oven to about 460F (230C). Cook in oven about 15 minutes; leave in oven for another 5 minutes. Alternatively, the fish can be simmered slowly over medium heat stove.
