MARINATED, DEEP-FRIED MACKEREL

(Japanese)



INGREDIENTS (4 servings):

12 mackerel ("saba"), about 30 g each
(A): 3 tablespoons soy sauce ("shoyu"), 1 tablespoon "sake" (Japanese rice wine), 1 teaspoon ginger ("shoga") juice, all-purpose flour, salad oil
HOW TO COOK:
  1. Marinate mackerel in (A) for 15 to 20 minutes.
  2. Drain on paper towel and dust with all-purpose flour.
  3. Preheat high-speed gas oven to about 460F (230C). Arrange (2) on lightly greased oven plate, pour oil over and cook in oven about 10 minutes. Alternatively, fish can be deep-fried. Garnish with citrus fruit if desired.
