STIR-FRIED CELERY
(Japanese)

INGREDIENTS (4 servings):
2 stalks celery with leaves, dried bonito flakes ("hana-gatsuo"), 1 tablespoon white sesame seeds, 1 tablespoon salad oil, 160 ml "sake" (Japanese rice wine), 3 tablespoons soy sauce ("shoyu"), 3 tablespoons sweetened cooking "sake" ("mirin"), 1 tablespoon sugar
HOW TO COOK:
- Wash celery and put in boiling water. Quickly take out and put in cold water, to retain color. Squeeze out water and chop.
- Heat salad oil in frying pan; add (1) and stir-fry. Add seasonings and simmer over low heat, stirring occasionally, until most of liquid disappears.
- Sprinkle with dried bonito flakes, crumbled with fingers. Add sesame seeds and toss.
