INGREDIENTS (4 servings):

2 stalks celery with leaves, dried bonito flakes ("hana-gatsuo"), 1 tablespoon white sesame seeds, 1 tablespoon salad oil, 160 ml "sake" (Japanese rice wine), 3 tablespoons soy sauce ("shoyu"), 3 tablespoons sweetened cooking "sake" ("mirin"), 1 tablespoon sugar
  1. Wash celery and put in boiling water. Quickly take out and put in cold water, to retain color. Squeeze out water and chop.
  2. Heat salad oil in frying pan; add (1) and stir-fry. Add seasonings and simmer over low heat, stirring occasionally, until most of liquid disappears.
  3. Sprinkle with dried bonito flakes, crumbled with fingers. Add sesame seeds and toss.
